Avocado Chocolate Mousse

This healthy pudding is easy to make and fun to serve to guests. They will never know that the base is avocado unless you tell them!



Why We Like This Recipe

Unlike normal puddings and mousses that need to be chilled after making, this recipe is ready to eat once complete. The primary ingredient is avocados. Avocados are given a bad rap for being high in fat, but they are high in monounsaturated fat. This fat is the good kind of fat that helps maintain healthy cholesterol levels. I have made this recipe numerous times for friends and it is always a hit, especially once they learn it is made from avocados.


Alterations

Throughout this recipe there are a couple of items that can be substituted with other items you might have in your home. The almond milk may be substituted with any type of dairy free milk such as soy milk, coconut milk, cashew milk, or oat milk. The honey can be substituted with any type of liquid sweetener such as maple syrup or agave nectar. This recipe might not be chocolatey enough for you depending on the type of chocolate you use. If that is the case then add some cocoa powder into the food processor and mix it up. This will give it a more concentrated chocolate flavor.


The Recipe

Serving Size: 70 g

Servings: 5

Cook Time: 5 mins

Total Time: 25 mins


Ingredients:

· 2 ounces dark chocolate

· 1 large ripe avocado

· ¼ cup almond milk

· 4 teaspoons honey

· ½ teaspoon vanilla extract

· Pinch of sea salt

· Cocoa powder (optional)

· Grated dark chocolate (optional for garnish)

· Coconut flakes (optional for garnish)


Instructions:

1. Put the chocolate into a heatproof bowl and set it over a saucepan of gently simmering water. Heat for 5 minutes, making sure the water doesn’t touch the bottom of the bowl.

2. Scoop the avocado from the skin into the food processor. Process until smooth.

3. Add the almond milk, honey, vanilla extract, and sea salt. Spoon the melted chocolate and process until smooth.

4. Spoon the mixture into smaller containers. Decorate the tops with grated chocolate and coconut flakes if desired.

5. Serve immediately of chill in the refrigerator until needed.
