GF ALMOND BUTTER DONUTS

I feel like I have made several peanut butter recipes to last a life time, I figured it was time to give almond butter some love! I love almond butter just as equally as I love any other nut butter, it is an obsession to say the least! I was unsure how these donuts were going to turn out because I don't have a donut pan accessible, and last time I tried to make donuts the dough was too watery to form the shape myself. However I had zero issue forming the donuts this time around. I am thoroughly impressed with myself being that it's only my second attempt at making donuts.



Flavor wise they were great, I really enjoyed the almond flavor and it wasn't too over powering. The texture of the donut is similar to a biscuit because I baked it, but the inside was nice and soft. You can enjoy these in the morning with a cup of coffee or at night with a glass of milk.



I used 1:1 Bob's Red Mill gluten free flour but you can also use all purpose flour if you do not want to make it gluten free. You can even swap out the honey for maple syrup if you wish to make it vegan as well!



RECIPE

Prep time: 15 minutes

Cook time: 10-15 minutes

Total time: 25-30 minutes


Ingredients


DOUGH

· ¼ cup almond milk

· 1 ½ tsp apple cider vinegar

· 3 tbsp almond butter

· 1/3 cup honey (use maple syrup for vegan recipe)

· 1 cup 1:1 gluten free flour

· 1 tsp baking powder

TOPPINGS

· 1 cup semi dark chocolate chips (use dairy free chips for vegan recipe)

· 3 tbsp crushed almonds

Instructions

· Preheat the oven to 350 degrees

· In a medium mixing bowl combine all of the wet ingredients

· Mix the wet ingredients until the almond butter is thoroughly mixed

· Add in the GF flour and baking powder

· The dough should be firm enough to roll into donut shape (add additional flour if not)

· Spray a baking sheet and place the donuts a few inches apart

· Bake for 10-12 minutes (or until golden brown)

· In a microwave safe dish, melt the chocolate until it’s a thick consistency

· Let the donuts cool, then dip in the chocolate mixture

· Place a few sprinkles of crushed almonds on top for looks (optional)
