I am sure we can all agree that buffalo flavored anything is bound to taste delicious, and these eggrolls are no exception! I have had eggrolls in several variations throughout my childhood, so I decided 'why not make my own?!'. The best part about this recipe is that it caters to many different dietary preferences such as vegan, vegetarian, etc. The ingredients are relatively simple and you can even play around with the spice variations to fit your palate.
Why chickpeas? Easy answer! Chickpeas are part of the legume family and are a great source of plant protein. Being that they are very versatile, you can add them in to almost any dish you make or even blend them up into hummus. These little guys are jam packed with nutritional benefits that help to improve your overall health. Protein contributes to muscle growth and repair, along with bone and skin health. Chickpeas also contain fiber, magnesium, potassium, B vitamins, and iron, all of which aid in heart health.
RECIPE
PREP TIME: 15 minutes
COOK TIME: 20-25 minutes
TOTAL TIME: 35-40 minutes
Ingredients:
· 1 medium onion
· 1 can of chickpeas
· 1 tbsp of avocado oil*
· 3 tbsp of almond milk
· 3 tbsp of buffalo hot sauce
· 2 tsp minced garlic
· 1 tsp onion powder
· 1 tsp smoked paprika
· 5 egg roll wraps
Note: if you do not have avocado oil you can substitute using whichever type of oil you have
Instructions:
· Put all ingredients into a medium saucepan and cook on a high boil for 5 minutes
· Place 2 tbsp of the mixture in each wrap and roll it up
· Line a baking sheet with foil
· Place the wrap eggrolls on the baking sheet and cook on 375 for 20-25 minutes
