Dark Chocolate Coconut Energy Bites

The perfect mix of dark chocolate and coconut to satisfy your sweet tooth! An all-time favorite snack of mine is any type of energy bite. They are the perfect snack to have on hand when you are in a pinch or don't have time to make food, and they are perfect size to carry with you on the go. You really can't go wrong! The best part about making energy bites is that you can play around with a mix of ingredients and come up with your own recipe personalized to your cravings. You can even throw in some nuts and seeds to give it a little extra kick!


In this recipe I used dates as a natural sweetener that provides additional health benefits. They contain a well-versed nutrition profile containing various vitamins, minerals, and fiber. Fiber is extremely important in the diet because it helps with digestive processes and contributes to your overall health. Dates contain ~7 g of fiber in a 100 g serving size. Dates also contain antioxidants that work in the body to protect our cells from disease causing molecules called free radicals. Dates are very similar to figs, raisins, and dried plums which are also abundant in antioxidants.




RECIPE

Prep time: 10 minutes

Cook time: 10 minutes

Total time: 20 minutes




Ingredients

· 1 cup of pitted dates

· ½ cup of oats

· ¼ cup of unsweetened cocoa powder

· 3 tbsp of nut butter (I used teddies PB)

· 1 tbsp chia seeds

· 1 handful of dark chocolate chips (use dairy free if needed)

· 1/3 cup of coconut flakes (plus additional flakes for coating)

Instructions

· Blend the dates in a food processor until it forms a paste consistency

· Add the rest of the ingredients and blend until smooth

· Roll the dough into 1-inch balls

· Roll each ball in coconut flakes until it is completely coated

  • store in an air-tight container in the refrigerator up to 5 days (lasts longer in the freezer)
