Homemade Vegetable Pizza

Who doesn’t love pizza? Pizza is comfort food. It is also super easy to make on your own.

Personal pizzas allow you to add the toppings of your choice: pepperoni, chicken, mushrooms, peppers, pineapple, the possibilities are endless!

What a lot of people do not realize is that pizza can be nutritious. Creating your own homemade pizza is a great way to add extra vegetables to your plate. Pizza can also provide a whole grain through the crust and protein from cheese and other toppings.

Recipe

Serving size: 1 pizza

Preparation Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Ingredients:

· 1 whole wheat pita bread, naan bread, or gyro bread

· ¼ cup marinara sauce

· ¼ cup shredded mozzarella cheese (or your cheese of choice)

· ½ cup spinach

· ¼ of diced red bell pepper

· 1 cup sliced a zucchini

· 4 diced baby carrots

Instructions:

1. Set oven to broil on high

2. Prepare pizza toppings. I prefer to heat all of my vegetables on the stove with olive oil over medium heat.

3. Place pita bread on a baking sheet. Broil pita bread for 2 minutes on each side.

4. Add marinara sauce and mozzarella cheese. Broil the pizza until the cheese is melted.

5. Add the rest of pizza toppings. Broil for 2 more minutes or until the pizza toppings are warm.

6. Enjoy!
