Some of my favorite meals are yogurt parfaits or smoothie bowls topped with fresh fruit and granola.
Growing up, I would always resort to the nature valley granola bar because although it is messy, it makes a great topping! I enjoyed that I was able to break the bar up into bigger (but small) pieces of granola. I would get the family sized box and go through them like crazy, which can add up financially after a while!
One day I decided to play around in the kitchen and make my own version of the Nature Valley Oats ‘N’ Honey bar. I like to call it the “crumbly granola bar”. Needless to say, I don’t think I could ever go back to the store-bought bars!
Recipe
Prep time: 10 minutes
Cook time: 15 minutes
Total time: 25 minutes
Ingredients:
● 2 rolled oats
● 1/4 cup raw honey
● 1/4 cup olive oil
● 1/4 cup organic coconut palm sugar
● Cinnamon (optional)
Directions:
1. Preheat the oven to 375 degrees
2. Place all ingredients in a large mixing bowl and thoroughly mix so that the oats are covered completely
3. Pour mixture onto a foil or parchment paper lined baking sheet. Flatten out the granola mixture into the shape of a rectangle
4. Bake for 15 minutes
5. After 15 minutes take the granola out and cut them immediately into the shape of bars
6. Let the granola sit for 20 minutes so that it hardens
7. Place them in a large tupperware & store in a cool place for up to 1 week
