Vegan Mac and Cheese Bites

Mac n cheese is one of those nostalgic foods that brings you back in time to when you were a child and living carefree. As a child, I would eat mac n cheese for every meal if my parents allowed me to.


Unfortunately, I've dealt with the consequences of lactose intolerance for the majority of my life, starting from when I was a baby until present day. It's difficult because I really do like dairy, but I have to resort to replicating meals that taste exactly like the real thing!


One thing I have noticed with several vegan cheese recipes is that there is not one universal way to do it. Essentially you could throw in a bunch of ingredients that you think might go well together, and odds are it will turn out pretty fantastic! That is what I did with this recipe. I looked through all of the spices in my spice cabinet and grabbed a mixture of them. This recipe is truly based on personal preference. After all, only you know what is pleasant to your taste buds!


Recipe


Ingredients

Sauce:

1 sweet potato (cooked)

1 cup of baby carrots (cooked)

½ onion (cooked)

½ cup nutritional yeast

garlic powder

1 tsp turmeric

onion powder

pepper

1 cup cashew milk

Pasta:

½ box of gluten free brown rice and cauliflower fusilli (or your pasta of choice)

Breadcrumbs:

toasted Ezekiel breadcrumbs

Instructions

1. Boil potato and all your veggies until they are soft

2. Blend potatoes, veggies and almond milk in a food processor or high-power blender until smooth

3. Boil a pot of water to cook your pasta (cook about 2 minutes less than recommended to achieve an al dente texture)

4. Mix your pasta with the sauce in a large mixing bowl

5. Use an ice cream scoop to scoop out the pasta balls. The balls should be about 2-3 inches in diameter.

6. Place pasta balls in the fridge and let it chill for an hour

7. Toast 4-5 pieces of Ezekiel bread and crumble into breadcrumbs

8. Take the mac n cheese balls out and preheat the oven to 400 degrees

9. Pour additional cashew milk in a bowl and dip the balls in the milk and then immediately into the breadcrumbs (you may need to mold the balls to make sure it is thoroughly coated

10. Place all of the balls with breadcrumbs onto a non-stick pan and bake for 20 minutes

11. Broil mac n cheese bites for 1-2 minutes or until crispy
